What You Need: |

2 tablespoons finely chopped onion
¼ teaspoon ground nutmeg
2 tablespoons butter or margarine
1 can (10¾ ounces) condensed cream of chicken soup
2 packages (10 ounces each) frozen chopped spinach, cooked and well drained
1 cup soft bread crumbs
3 eggs, separated
Croutons (for garnish)
Sour cream

How To Cook: |
|
|
1. Cook onion with nutmeg in butter in a saucepan until tender.
|
2. Add soup, spinach, bread crumbs and egg yolks.
|
3. Beat egg whites in a bowl until soft peaks form; fold into spinach mixture.
|
4. Pour mixture into buttered, floured 8½ by 4½ by 2½-inch loaf pan; bake in preheated 375°F oven 1 hour, or until knife inserted in center comes out dean.
|
5. Let stand 10 minutes; invert on serving platter.
|
6. Garnish with croutons; serve with sour cream.
