Bean Encidlada
In Mexico, the enchilada is a corn tortilla that is filled with any of many choices of stuffing, covered with a hot sauce, and then baked. The following recipe is not only delicious, but is exceptionally easy to prepare.

What You Need:
  • 1 softened corn tortilla
  • ¼ cup refried beans
  • 1 stick Monterey Jack cheese (¼ to ½ inch square)
  • 1 strip green chili (about ½ inch wide)
  • 1 tablespoon sour cream (or more to suit taste)
  • 1 tablespoon canned taco or enchilada sauce (or more to suit taste)

  • How To Cook:
    1. Place the beans in a strip along the center of the softened tortilla. Add the green chili, cheese and sour cream.

    2. Roll up and place seam side down on a serving plate. Pour taco or enchilada sauce over the length of the tortilla.

    3. Heat in the microwave oven about 1 minute per enchilada or until the filling is hot.

    SOFTENING CORN TORTILLAS:
    1. Place the tortilla on a plate and heat in the microwave oven about 30 seconds each.

    2. Transfer to a warm plate and keep covered until ready to use.

    To Make: 1 enchilada
