| How To Cook: |

1. Cook the onion, carrot, and the water in a covered casserole 5 minutes in the microwave oven.
|
2. Add the fish and spoon the vegetables over. Cook, covered, 5 minutes more, or until the fish flakes easily.
|
3. Remove the fish and flake it with a fork. Mix the onions, carrots, fish, pickles, and capers and chill.
|
4. Mix the mayonnaise, brandy, lemon juice and catsup into a sauce.
|
5. When ready to serve, spoon some sauce over each portion and garnish with a lemon slice.

TIP:
|
Use haddock, cod, red snapper, sole, or any other white fish. Microwave cooking is ideal for fish cookery as it doesn't dry out the fish.
