Chicken Cacciatori
What You Need:
  • One 2½-to 3 pound chicken
  • 1 can (16-ouhces) tomato sauce
  • 1 can (6-ounces) tomato paste
  • ½ cup finely chopped onion
  • ¼ cup chopped green pepper
  • 1 teaspoon salt
  • t teaspoon crumbled oregano
  • 2 cloves garlic, minced
  • ¼ teaspoon pepper
  • ½ teaspoon crumbled thyme
  • ¼ cup dry red wine
  • 1¾ cups water
  • How To Cook:
    1. Wash and cut up the chicken. Mix the tomato sauce and tomato paste in a large covered casserole.

    2. Put the chicken in a large casserole with the larger end of each piece to the outer edge of the baking dish.

    3. Sprinkle on the onion, green pepper, salt, oregano, garlic, pepper, thyme and wine.

    4. Cover and cook in the microwave oven until tender (about 30 minutes).

    5. Stir in the water and cook in the microwave oven until the sauce begins to simmer again.

    6. Serve alone or over pasta.

    TIP:
        Cut the chicken into as uniform pieces as possible, for even cooking. Adding the excess liquid near the end of the cooking cycle speeds up the cooking.
