Fish With Bacon And Potatoes
(Fish Mit Speck Gefacken)
What You Need:
  • 1 pound white fish filets
  • Salt and pepper
  • Lemon juice
  • Potatoes, cooked and sliced (3 to 4 cups)
  • 1 cup thinly-sliced onion
  • 4 slices bacon
  • 1½ cups sour cream
  • ½ teaspoon paprika

  • How To Cook:
    1. Sprinkle the fish with salt and lemon juice and let stand 1 hour. Bake enough potatoes in the microwave oven to make 3 to 4 cups, sliced. Peel and slice the potatoes, put in the bottom of a 10-inch by 6-inch rectangular casserole.

    2. Cook the onion slices, covered, in the microwave oven for 3 minutes. Cook the bacon on several layers of paper toweling in the microwave oven until crisp and brown [about 4 minutes).

    3. Put the fish slices on top of the potatoes. Sprinkle on the onion and the crumbled bacon. Cover with ¾ cup of the sour cream. Salt and pepper to taste.

    4. Cover with wax paper and cook in the microwave oven until the fish is done and will flake easily [about 8 minutes). Mix the remaining ¾ cup sour cream and the paprika. Spread over the fish. Cook, covered, for 1 minute more.

    To Serve: 6
