Mint Chutney
This bright flavor is great with all roasted meats and with Samosas. Remember not to touch your eyes after cleaning jalapeno peppers.

What You Need:
  • 1 medium yellow onion, peeled and sliced
  • 1 bunch fresh coriander, most of the stems removed
  • 1 teaspoon peeled and chopped garlic
  • ½ cup fresh mint leaves
  • ¼ cup lemon juice
  • 1 teaspoon salt
  • 1½ teaspoons sugar
  • 2 small jalapeno peppers, seeded and chopped
  • 1 teaspoon dry-roasted cumin seeds
  • 2 tablespoons dry-roasted peanuts
  • ¼ cup water

  • How To Cook:
    1. Blend all the ingredients in a food processor.

    2. Refrigerate, covered, for up to 2 weeks.

    To Make: 1½ cups
