Escoveitch Of Grouper
What You Need:
  • Small fish or slices of king fish
  • Oil
  • 1 cup vinegar
  • 2 sliced onions
  • 2 tablespoons water
  • 1 chopped hot pepper
  • A pimento leaf and a pinch of salt
  • How To Cook:
    1. Fry fish in hot oil and set aside. Mix remaining ingredients together and bring to a boil. Simmer for about 20 minutes.

    2. Lay fish in a shallow dish. Cover with hot vinegar sauce and marinate for about 12 hours before serving.

    NOTE:
        In Mexico the fish is not cooked, it is marinated and eaten raw.
