Spiced Bahamian Souse
What You Need:
  • 3 sheep tongue
  • 3 pounds pig feet
  • ½ pound tripe
  • ½ teaspoon spice seed
  • 4 spice leaves
  • Water
  • 1 pound native mutton
  • 1 pound native fresh pork
  • 1 pig ear
  • 1 large onion, sliced
  • Hot pepper
  • Salt to taste

  • How To Cook:
    1. Scald all meats for 5 minutes then pour off water. Cut meats into bite size pieces.

    2. Rinse meats and odd enough water to cover. Add onion, spice seed and spice leaves.

    3. Season to taste with salt, hot pepper and lime juice. Boil until done in pressure cooker for ¾ hours.

    To Serve: 6
