Barbecued Spare Ribs
What You Need:
  • 2 pounds spare ribs, cut in serving pieces
  • 2 teaspoons salt
  • 4 pimento grains, crushed
  • Oregano
  • ¼ oz garlic powder
  • ¼ oz onion powder
  • ¼ cup paprika
  • ¼ cup lemon juice

    SAUCE
  • ¼ cup chopped onions
  • 1 tablespoon fat
  • ½ cup water
  • 2 tablespoons vinegar
  • 1 tablespoon Worcestershire / Pickapeppa sauce
  • 2 tablespoons brown sugar
  • ½ cup chili / tomato sauce
  • ½ teaspoon paprika
  • 1 teaspoon black pepper
  • 1 teaspoon prepared mustard
  • Hot pepper sauce to taste

  • How To Cook:
    1. Season ribs with mixture of salt, oregano, garlic, onion and paprika. Rub into meat well.

    2. Place ribs in moderate oven with a small amount of water, and cover.

    3. Cook for approximately ½ hour until almost tender. Remove from oven and cool.

    4. Place ribs on rack over cools, and turn continually until done (approximately 10 minutes).

    5. Make sauce by combining all ingredients and simmering for 10 minutes.

    6. Just a few minutes removing from rack, brush ribs with sauce.

    To Serve: 2
