Corn Relish
What You Need:
  • 12 young corn ears
  • 3 peppers (remove seeds)
  • 1˝ cups sugar
  • 2 tablespoons salt
  • 2 teaspoons flour
  • 4 cups vinegar
  • 4 onions
  • Mustard to taste
  • How To Cook:
    1. Remove com from the cob. Put onions and pepper through a mixer and mix with corn.

    2. Cover with 3 cups of vinegar.

    3. To remaining cup of vinegar add sugar, salt, flour and mustard to make a paste.

    4. Add this to vegetable mixture and bring to a slow boil for 30 minutes.

    5. Pour into hot jars and seal.
