Genoese Condijun
What You Need:
  • 6 large tomatoes, peeled and sliced
  • 1 medium-sized cucumber, washed and thinly sliced
  • 1 medium-sized green pepper, cleaned and cut into thin strips
  • 1 medium-sized onion, peeled and chopped
  • 2 garlic cloves, crushed
  • 8 flat anchovy fillets, drained and chopped
  • 12 pitted black olives
  • 1/3 cup olive oil
  • ¼ cup chopped fresh parsley
  • Salt, pepper to taste
  • ½ teaspoon dried basil
  • How To Cook:
    1. Combine tomato and cucumber slices, pepper strips, chopped onions, and garlic in a serving dish.

    2. Top with chopped anchovies and olives.

    3. Combine remaining ingredients and pour over salad. Mix well.

    To Serve: 6 - 8
