Mixed Fruit Salad
(Rudjak)
This traditional dish, called "rudiak"; is a holiday specialty that is eaten in Indonesia both as a salad and as a dessert. Some of the seasonings in this recipe are substitutes for native ingredients that are not generally available in America.

What You Need:
  • ˝ teaspoon chili powder
  • 2 tablespoons brown sugar
  • 3 tablespoons fresh lemon juice
  • 2 teaspoons anchovy paste
  • 3 tablespoons salad oil
  • Pepper to taste
  • 4 cups diced mixed fresh fruit (pineapple, mangoes, oranges, grapefruit)
  • 1 medium-sized cucumber, peeled, seeded, and diced

  • How To Cook:
    1. Combine first six ingredients to blend thoroughly.

    2. Put fruit and cucumber in a bowl; add dressing.

    3. Refrigerate 1 hour to blend flavors.

    To Serve: 4 - 6
