Basle Spinach "Frogs"
What You Need:
  • 16 large spinach leaves
  • Pepper and salt
  • 1˝ oz butter
  • Grated nutmeg
  • 1 - 2 minced shallots
  • 1 egg
  • 1 pound minced lean pork
  • Cooking fat

  • How To Cook:
    1. Wash the spinach leaves and put them for 2-3 minutes into boiling salted water; drain and layout on a wooden board.

    2. Mix the butter, shallots, pork, seasonings and nutmeg and bind with egg.

    3. Put some filling on each loaf and fold the edges together.

    4. Heat the fat in a frying pan and put in the stuffed leaves; baste frequently with the fat, and turn the "frogs" over once.

    5. Place in a vegetable dish and serve with Bechamel Sauce.

    To Serve: 4 - 6
