Fish Pie
(Coulibiac)
True Coulibiac, or Hot Salmon Pie, can be a rich and elaborate dish, the filling being fresh salmon fillet with rice or semolina flavored with mushrooms, onion, chopped parsley, hardboiled egg and vesiga (the dried marrow of the sturgeon).

What You Need:
  • ˝ pound puff pastry
  • A little chopped onion or leek
  • ˝ pound white fish
  • 1 oz rice or semolina
  • 2 tablespoons bechamel sauce
  • Chopped parsley
  • Pepper and salt

  • How To Cook:
    1. Cook the rice or semolina and mix it with the cooked, flaked fish.

    2. Add the sauce, seasoning, chopped parsley and onion.

    3. Roll the pastry into a large square.

    4. Spread the mixture in the center of it and then fold over each of the four corners so that they meet in the center of the square.

    5. Join the edges, leaving a small opening in the center.

    6. Bake in a hot oven (450°F) for 35 - 40 minutes.
