Veal Rolls

What You Need:
  • 8 veal cutlets, 5 inches by 2½ inches by ¼ inch
  • ¼ teaspoon pepper
  • 1 tablespoon minced onion
  • 3 tablespoons chopped parsley
  • ¼ pound minced beef
  • 3 tablespoons butter
  • ¼ pound lean pork, minced
  • 14-oz. can sliced mushrooms
  • 2 tablespoons packaged dried breadcrumbs
  • ½ pint sour cream
  • ¼ cup cream
  • 1 teaspoon sugar
  • 1 egg
  • 1 teaspoon piquant table sauce
  • 1½ teaspoon salt

  • How To Cook:
    1. Trim fat from cutlets.

    2. Mix the beef, pork, crumbs, cream, egg, 1 teaspoon salt, pepper, onion and parsley well together.

    3. Then spoon 2 rounded tablespoonful of meat mixture on to one end of cutlet.

    4. Roll each cutlet from filled end, skewer.

    5. Heat the butter in the pan and brown veal well in it.

    6. Add the undrained mushrooms, sour cream; simmer, covered, ¾ hour or till tender.

    7. Remove skewers from rolls; arrange on heated platter.

    8. Season gravy with ½ teaspoon salt, sugar, piquant sauce; pour over rolls and serve with mashed potatoes or fluffy rice.

    To Serve: 6 - 8
