Chayote Salad
What You Need:
  • 4 medium-sized chayotes
  • Salt
  • 1 medium-sized onion, peeled and minced
  • 1 medium-sized ripe avocado, peeled and cubed
  • 2 small hot red peppers, seeded and chopped
  • ¼ cup olive or salad oil
  • 2 to 3 tablespoons fresh lime or lemon juice
  • 1 tablespoon wine vinegar
  • ½ teaspoon dried oregano
  • Salt, pepper to taste

    GARNISHES
  • 1 large tomato, peeled and cut into wedges
  • 3 tablespoons chopped fresh coriander or parsley

  • How To Cook:
    1. Scrub chayote well and cut into cubes, discarding any seeds.

    2. Steam In a small amount of salted water until tender, about 12 minutes.

    3. Drain and cool.

    4. Combine with onion, avocado, and red peppers.

    5. Mix remaining ingredients, except garnishes, and pour over salad, mix well.

    6. Serve with garnishes.

    To Serve: 4 - 6
