		Salt
		1 medium-sized onion, peeled and minced
		1 medium-sized ripe avocado, peeled and cubed
		2 small hot red peppers, seeded and chopped
		¼ cup olive or salad oil
		2 to 3 tablespoons fresh lime or lemon juice
		1 tablespoon wine vinegar
		½ teaspoon dried oregano
		Salt, pepper to taste 
 GARNISHES
		1 large tomato, peeled and cut into wedges
		3 tablespoons chopped fresh coriander or parsley

											| How To Cook: |

											|  |  | 1. Scrub chayote well and cut into cubes, discarding any seeds. 
 
 |  | 2. Steam In a small amount of salted water until tender, about 12 minutes. 
 
 |  | 3. Drain and cool. 
 
 |  | 4. Combine with onion, avocado, and red peppers. 
 
 |  | 5. Mix remaining ingredients, except garnishes, and pour over salad, mix well.
