Iberian Green Salad With Oranges
What You Need:
  • ˝ garlic clove, split
  • 3 to 4 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • Salt, pepper to taste
  • 1˝ quarts mixed salad greens, washed, dried, torn into bite-size pieces, and chilled
  • 1 large red onion, peeled, sliced thinly and separated into rings
  • 2 navel oranges, peeled, white membranes removed, and sliced crosswise

  • How To Cook:
    1. Combine garlic, oil, lemon juice, salt, and pepper in a small jar or bowl; leave 1 hour.

    2. When ready to serve, put greens, onions, and oranges in a salad bowl; toss.

    3. Shake dressing and pour over salad; toss.

    4. Remove and discard garlic. Serve at once.

    To Serve: 4
