Basic Fritter Batter
What You Need:
  • cups all-purpose flour
  • 3 teaspoons baking powder
  • ½ teaspoon salt (omit for sweet fritter)
  • 1 tablespoon sugar (for fruit fritters only)
  • 1 egg, slightly beaten
  • 1 cup milk
  • 1 tablespoon shortening, melted
  • 1½ cups chopped or ground fish or ham OR 2 cups fruits or vegetables, chopped or crushed

  • How To Cook:
    1. Combine ingredients in the order given. Stir only enough to dampen batter. Add meat, vegetables or fruit to batter last.

    2. Heat oil in deep skillet to 375°F degrees.

    3. Drop a tablespoon at a time into hot oil.

    4. Cook 1 fritter first to test.

    5. Fry a few fritters at a time, keeping heat constant, for about 3 to 5 minutes, until light, crispy and golden.

    6. Drain on absorbent paper.

    TIP:
        If fruit is very tart, sprinkle 2 to 3 tablespoons sugar over fruit before combining it with batter.
