Shrimp And Spinach Potlicker
What You Need:
  • 1 lemon, juiced
  • 2 garlic cloves, minced
  • 1 teaspoon cumin
  • ˝ teaspoon fresh ginger, finely minced
  • 2 tablespoons butter
  • 1˝ pounds shrimp, deveined and cooked
  • 1 onion, finely chopped
  • 1˝ pounds fresh spinach, chopped
  • 1 tablespoon creamed coconut
  • Dash of cayenne and nutmeg

  • How To Cook:
    1. Combine lemon juice, garlic, cumin and ginger; marinate shrimp in mixture for 1 hour. Reserve marinade.

    2. Heat butter in skillet. Saute shrimp for several minutes. Remove shrimp and set aside.

    3. Add marinade to skillet. Put in onions and spinach.

    4. Cover and cook until spinach is wilted, about 2 minutes.

    5. Add creamed coconut and seasonings.

    6. Serve over rice or Johnny Cake or Johnny Cake with Cornmeal.
