Fig Syrup
(Injir Khoshabi)
This Fig Syrup which follows is typically Turkish and very popular drunk with candies.

What You Need:
  • 2 pound figs
  • 3 pints hot water
  • Orange-flower water

  • How To Cook:
    1. Cut off the stalks of figs, prick each one here and there with a wooden skewer, place them in a basin with hot water, and let them stand for 10 or 12 hours.

    2. Then pass the liquid through a sieve into a glass bowl, and add the figs with a few drops of orange-flower water and a few pieces of ice, and serve.

    3. It is a refreshing and wholesome beverage.
