Flower Syrup
(Menekshe Shurubi)

This Flower Syrup which follows is typically Turkish and very popular drunk with candies.
|
What You Need: |
|
|
1 pound of fresh-gathered violets
2¼ pints of boiling water
3 pound of crushed sugar
|
|

|
How To Cook: |
|
|
1. Procure 1 pound of fresh-gathered violets, cut the stalks off, and put the leaves in a basin.
|
2. Pour 2¼ pints of boiling water over them, immediately cover it, and let it remain for 12 or 15 hours.
|
3. Then pass the liquor through a clean cloth into a stew pan, add about 3 pound of crushed sugar, stir with a wooden spoon till the sugar is dissolved, and set it on a charcoal fire.

4. Just as it commences to boil up, instantly remove it, and let it remain covered till nearly cold.
|
5. Then pass it again through a cloth, bottle and cork it up until wanted.
