Passover Ingerlach
What You Need:
  • ¾ cup honey
  • ½ pound sugar
  • 2 eggs, beaten till creamy
  • 1 cup matzo meal
  • ½ cup ground almonds or walnuts
  • 1 tablespoon ground ginger

  • How To Cook:
    1. Mix honey and sugar in a deep saucepan, bring to the boil and cook for 10 minutes till it is a deep golden syrup. Remove from the heat.

    2. Combine other ingredients with a fork and stir into the syrup. Place over very low heat and cook for approximately 10 minutes, stirring constantly to prevent sticking or burning.

    3. The mixture will be thick and sticky. Turn out on a wet slab and flatten to ½ inch thickness with the bowl of a large spoon that has been dipped in cold water.

    4. Dust with sugar and ground ginger and cool for 10 minutes before cutting into 1-inch squares or diamond shapes.
