Semolina Cakes
(Ma'amool)
What You Need:
  • 4 cups semolina
  • 3 cups cooking fat
  • 3 cups chopped walnuts
  • 1 cup sugar
  • A pinch of salt
  • 1 tablespoon orange-flower water
  • 1 tablespoon rosewater
  • 2 cups boiling water
  • Icing sugar

  • How To Cook:
    1. Sift the semolina; heat the fat and add when nearly boiling. Mix well, cover and leave for 3 hours.

    2. Chop the walnuts finely and mix with the sugar and flavorings.

    3. Pour the boiling water over the semolina, adding more if necessary to make stiff dough.

    4. Divide into pieces about the size of a small apple.

    5. Form these pieces of dough into hollow balls; fill the hole with the nut and sugar mixture and close up securely.

    6. Press the semolina balls well down into slightly greased, deeply fluted patty pans, so that the dough takes on the shape of the pan.

    7. Shake out, arrange on a greased baking sheet and bake in a moderate oven (350°F) until slightly browned-about 25 minutes.

    8. Sprinkle icing sugar on top while still hot.
