Traditional Honey Cake
(Lekach)
What You Need:
  • 6 eggs
  • ½ pound sugar
  • 1 cup honey
  • 2 tablespoons salad oil
  • 14 oz flour
  • 1½ teaspoons baking powder
  • 1 teaspoon baking soda
  • ¼ teaspoon ground cloves
  • ½ teaspoon each allspice and cinnamon
  • ½ cup each raisins and chopped nuts
  • ¼ cup finely cut citron
  • 2 tablespoons brandy

  • How To Cook:
    1. Beat the eggs, adding sugar gradually while beating until light and creamy.

    2. Stir in honey and oil.

    3. Sift together all dry ingredients and add nuts and fruit before combining with first mixture.

    4. Add brandy last.

    5. Bake in a rectangular tin, lined with greased paper (350°F), for 1 hour.

    6. Invert tin and allow cake to cool before removing.

    7. Serve cut into squares or diamond shapes.

    To Make: 1 cake
