What You Need: |

2 pound brisket of beef
1 onion, diced
2 pound turnip (1-inch dice or cut into inch square thin slices)
Water to cover
1 teaspoon salt
A dash of nutmeg
˝ cup honey, brown sugar, syrup or black treacle
2 tablespoons hot melted fat, preferably chicken fat
2 tablespoons flour

How To Cook: |

|
1. Brown the meat and onion in the, casserole. When nicely browned, add the turnip and enough water to cover.
|
2. Bring to the boil, skim well, and then turn down heat to simmer. Add salt, sweetening and nutmeg.
|
3. Cook over same heat for 1 hour, shaking dish occasionally to prevent burning.
|
4. Should more liquid be required, add boiling water a little at a time. The turnip turns a golden-orange and looks most attractive.
|
5. This dish is done when the meat is tender enough to pierce with a fork.
|
6. Lightly brown flour in melted fat and add, gently stirring in to distribute evenly. Cook 5 minutes longer.
