½ pound diced green beans
½ pound diced aubergine
½ pound diced carrot
¾ pound sliced tomatoes
Salt
4 oz butter
4 eggs
1 pound cooked rice

How To Cook: |
|
|
1. Mix all the vegetables together in a well buttered casserole and season with salt.
|
2. Pour melted butter over the vegetables and cover with seasoned beaten eggs.
|
3. Bake in a moderate oven (350°F) until vegetables are tender and eggs cooked.
|
4. Serve with the cooked rice.
