What You Need:            (To Serve: 4 - 6)

  • ½ pound diced green beans
  • ½ pound diced aubergine
  • ½ pound diced carrot
  • ¾ pound sliced tomatoes
  • Salt
  • 4 oz butter
  • 4 eggs
  • 1 pound cooked rice

  • How To Cook:
    1. Mix all the vegetables together in a well buttered casserole and season with salt.

    2. Pour melted butter over the vegetables and cover with seasoned beaten eggs.

    3. Bake in a moderate oven (350°F) until vegetables are tender and eggs cooked.

    4. Serve with the cooked rice.
