Braised Chicken With Tomatoes
(Dejaj Macfool Ma Matisha)
What You Need:
  • 1 chicken, cut in four
  • 2 pieces of cinnamon bark
  • 5 onions, sliced
  • 7 tomatoes, cut in half and seeded
  • 1 teaspoon salt
  • ˝ an onion, finely chopped
  • 1˝ teaspoons powdered saffron
  • ˝ teaspoon pepper
  • ˝ teaspoon ground ginger
  • ˝ tablespoon chopped parsley
  • ˝ pint olive oil

  • How To Cook:
    1. Spread the pieces of chicken in a flameproof casserole with the cinnamon bark, cover with the sliced onion and then with the tomatoes.

    2. Mix all the other ingredients well to make a sauce, and then pour this over the chicken.

    3. Simmer for 1˝ hours, or until the chicken is tender.

    4. Serve in the same dish, first removing the cinnamon bark.

    To Serve: 2 - 4
