Cape Province Bean Stew
(Boontjie Bredee)
What You Need:
  • 3 pound ribs of mutton
  • 2 tablespoons dripping or fat
  • Flour
  • Plenty of green beans
  • Pepper and salt
  • 6 potatoes
  • 3 onions

  • How To Cook:
    1. Cut the mutton into small pieces, flour each piece thoroughly and season with pepper and salt.

    2. Skin the onions, chop them up finely and fry them golden-brown in the dripping or fat.

    3. Then add the meat and the green beans, cut in small pieces.

    4. Add a little water, also the potatoes, peeled and halved, then stew gently for at least 3-4 hours.

    5. Tomatoes, a green chili, a small cauliflower and other vegetables may be added; also peeled, cored and sliced quince (previously parboiled in water and sugar, if the fruit is acid and hard).

    To Serve: 4 - 6
