Meat Stew With Peas
(Jilbana Bil Gub)
What You Need:
  • 2 pound lean, boned mutton, cut in 3-inch squares
  • 1 tablespoon salt
  • 1 teaspoon saffron
  • 2 teaspoons ground ginger
  • 1 tablespoon leek, cut small
  • ¾ pint olive oil (approx)
  • Peel of 1 citron
  • "Chokes" of 20 artichokes
  • 1 pound peas
  • 1 lemon

  • How To Cook:
    1. Put the mutton, salt, saffron, ginger, leek, olive oil and 21 pints water into a deep cooking pot.

    2. After cooking for 1 hour, put in the citron peel, in 2 pieces.

    3. When the meat is nearly cooked, take out the citron peel and put in the artichokes and peas and continue cooking until all is well done; put into a deep serving dish.

    4. Cut the citron peel small, mix it with the juice of the lemon and sprinkle over the meat.

    To Serve: 4 - 6
