Brazilian Chicken
(Vatapa)
What You Need:
  • 1 large chicken
  • Salt and black pepper
  • 1 onion
  • Garlic
  • Bay leaf
  • About 2 oz fat
  • Few prawns
  • Peanuts
  • Palm or olive oil
  • Coconut
  • Corn flour

  • How To Cook:
    1. Boil a chicken until tender, adding salt, minced onion, garlic and half a bay leaf.

    2. Drain carefully, take the meat from the bones and cut up.

    3. Melt fat in a saucepan and add the chicken pieces, with onion, garlic, salt and spices to flavor, then fry until browned.

    4. Add some of the chicken broth and as many as possible of the following; a few prawns, fried and minced peanuts, some black pepper, a cupful of palm or olive oil and the milk of a fresh coconut.

    5. Thicken slightly with corn flour and cook for a few minutes longer.

    To Serve: 4 - 6
