Hollandaise Sauce
What You Need:
  • 3 dessertspoons butter
  • A dash of cayenne pepper
  • 2 yolks of eggs
  • 2 tablespoons boiling water
  • ¼ teaspoon salt
  • 1 tablespoon lemon juice

  • How To Cook:
    1. Cream the butter and add the beaten yolks.

    2. Add the seasoning and water.

    3. Cook over water, boiling very gently until the sauce is thick; stir constantly.

    4. Remove from the heat and add lemon juice.

    5. Serve at once with fish steaks, baked or grilled fish, hot asparagus or broccoli.
