Potatoes With Cheese And Onion Sauce
(Huancaina Papas)
What You Need:
  • 6 large potatoes
  • 1 medium-sized onion (or 4-5 shallots), thinly shaved
  • 1 cup cottage cheese
  • ½ cup milk
  • Juice of 1 lemon
  • 1 hard-boiled egg yolk, mashed
  • Salt and pepper
  • A little paprika

  • How To Cook:
    1. Bake the potatoes in a moderately hot oven (400°F) for about ¾ - 1 hour.

    2. Alternatively, boil them whole and unpeeled in salted water.

    3. Peel the potatoes, cut into chunks and serve with a sauce made by combining the remaining ingredients.

    4. This should be served either cold or just slightly warm-but not hot.

    To Serve: 4 - 6
