Kent Pudding Pies
What You Need:
  • 3 oz ground rice
  • 1˝ pints milk
  • 2 - 3 oz butter
  • 4 oz sugar
  • Salt
  • Grated lemon rind
  • 3 - 4 egg yolks
  • Currants

  • How To Cook:
    1. Boil ground rice in milk until cooked, remove from the heat and beat in butter and sugar.

    2. Add some salt and a little spice or grated lemon rind, and then beat in egg yolks.

    3. Have ready some large saucers lined with a good short crust or thinly rolled puff pastry.

    4. When the rice mixture has cooled, fill the cases three-part full, sprinkle with currants and bake in a moderate oven (375°F) until the pastry is cooked.
