Pembrokeshire Mutton Pie
What You Need:
  • 1 pound flour
  • 8 oz minced lean mutton
  • Salt and pepper
  • 8 oz lard
  • 8 oz currants
  • ¼ pint water (approx.)
  • 6 oz sugar

  • How To Cook:
    1. Sieve the flour and salt. Heat the lard in the water and bring once to the boil.

    2. Add the flour and stir to a dough with a wooden spoon; when the dough is cool enough to handle, line a pie dish as quickly as possible (or if preferred, make several small pies).

    3. Mould into shape without rolling the dough.

    4. Add the filling, season and cover with a pastry top.

    5. Bake in a hot oven (450°F) for the first 10 minutes, and then continue to bake in a moderate oven (375°F) until the pie is golden brown.

    6. Serve hot.

    TIP:
        It is essential to work quickly when shaping this pastry, for it hardens as it cools.
