Snowdon Pudding
(Pwdin Y Wyddfa)
What You Need:
  • 1˝ oz rice flour
  • 6 oz Demerara sugar
  • 6 well-beaten eggs
  • Grated rind of 2 lemons
  • Butter
  • Some good raisins
  • ˝ pound finely chopped suet
  • ˝ pound breadcrumbs
  • 6 oz lemon or orange marmalade

  • How To Cook:
    1. Decorate the sides and bottom of a well-buttered mould with some fine raisins, split open and stoned, but not divided; press the cut side on to the butter to make them adhere.

    2. Mix the suet in a basin with the breadcrumbs, marmalade and rice flour.

    3. Then add the sugar, well-beaten eggs and the grated lemon rinds.

    4. Beat till all the ingredients are thoroughly mixed, pour into a mould, cover with buttered paper and a floured cloth and boil for It hours.

    5. Some kind of sweet sauce is usually poured over this pudding.
