Yule Bread
(Julekake)
What You Need:
  • 1˝ pound plain flour
  • 1˝ oz yeast
  • 4˝ oz butter
  • ˝ pint milk
  • 3˝ oz sugar
  • 4 oz seedless raisins
  • 1 teaspoon ground cardamom
  • 4 oz candied peel

  • How To Cook:
    1. Mix the flour, half the butter (melted) half the sugar and the cardamom in a bowl.

    2. Warm the milk slightly and add to the dry ingredients, together with the yeast.

    3. Beat the dough thoroughly with a large wooden spoon until smooth and even.

    4. Put to rise for about 20 minutes.

    5. Add the rest of the butter and sugar, the raisins and peel, then put to rise again for another 20 minutes.

    6. Divide in two and knead each portion on a lightly floured board in the shape of a long sausage.

    7. Turn in the two ends to the middle of the sausage, rounding the cake as you work so that it makes a solid, round mass.

    8. Stand it in a warm place to prove for a further 15 minutes.

    9. Brush with beaten egg and bake for 30 - 40 minutes in a hot oven (450°F).
