| 1. Prepare the dough as in the recipes for Streiselkuch and as soon as it forms bubbles put it on a board sprinkled with flour and beat with the hands until it comes away from the board - add a little more flour as may be necessary.

| 2. Allow to rise once more, then put in a cool place, let it rise again, and then beat it down again. 
 
 | 
| 3. Repeat this two or three times, then knead the dough for a few minutes, roll to an oblong strip and cut into fingers.

| 4. Mix one egg white, the sugar and sultanas, and roll together. 
 
 | 
| 5. Place these rolls in a shallow pan about 1 inch apart and allow to rise again. 
 
 | 
| 6. Before baking, brush over lightly with egg white and bake in a hot oven (450°F) for about 45 minutes. 
 
 | 
| 7. When it is taken from the oven, cover with a thick syrup made by boiling 2 oz. sugar with a little water and replace in a slow oven until the sugar mixture is firm and white.
