Shrimp Croquettes
(Croquettes Aux Crevettes)
What You Need:
  • 1½ oz butter
  • 6 - 8 oz peeled shrimps
  • 1½ oz flour
  • Flour, beaten egg and browned breadcrumbs for coating
  • ¼ pint milk
  • A little grated cheese
  • Salt and pepper
  • Fat for frying
  • A little lemon juice

  • How To Cook:
    1. Make a white sauce with the butter, flour and milk, add the cheese, and season well with salt, pepper and lemon juice.

    2. Stir in the shrimps, put the mixture into a refrigerator or a very cold larder, and allow it to stiffen.

    3. Flour the hands, and roll the mixture into 8 croquettes.

    4. Dip these in flour, brush with beaten egg, and roll in breadcrumbs.

    5. Fry in hot fat until brown all over.

    TIP:
        If you peel the shrimps yourself, boil the heads in water and use this stock instead of the milk.
