Cold Walnut Pudding
(Pudim De Noses)
What You Need:
  • 6 oz shelled walnuts
  • 5 eggs
  • A little powdered cinnamon
  • 6 oz caster sugar

  • How To Cook:
    1. Grind the walnuts and flavor with a little cinnamon.

    2. Beat up the egg yolks with the sugar until pale straw-colored and thick, then beat in the ground nuts.

    3. Whisk the egg whites until very stiff, and then fold them into the other mixture.

    4. Grease a pudding mould, and sprinkle the inside with caster sugar.

    5. Pour in the mixture -it should come three-quarters of the way up the sides-put some greaseproof paper on top, and steam for ¾ - 1 hour.

    6. When it is ready, turn it out of the mould; eat cold, with whipped cream and fruit syrup.

    To Serve: 1 - 2
