Herring Cream
What You Need:
  • 4 large herrings
  • 2 rolls, moistened with milk
  • 2 tablespoons butter
  • 2 eggs
  • 3 tablespoons sour cream
  • 1 onion, grated
  • 3 tablespoons Parmesan cheese
  • Salt and pepper to taste
  • A dash of nutmeg
  • Breadcrumbs

  • How To Cook:
    1. Soak, clean and bone the herrings. Put through a mincer with the rolls.

    2. Cream the milts and roe with 1 tablespoon butter and 2 egg yolks.

    3. Add sour cream, onion and Parmesan and combine with minced fish and rolls.

    4. Season to taste and mix thoroughly. Beat egg whites until stiff and fold in last.

    5. Pour into a greased shallow baking dish, leaving the mixture in a pyramid shape. Do not flatten.

    6. Sprinkle liberally with breadcrumbs, dot with remaining butter and bake in a moderately hot oven (400°F) for 30 minutes.

    7. Serve with melted butter.
