	1. Prepare the meat and heat the butter and lard in a saucepan.

	2. Rub the meat well with salt and brown it on all sides.

	3. Add the sliced onions, carrots, tomatoes, a little parsley and liquid, with plenty of seasoning.

	4. Simmer gently for 2 - 2½ hours, until the meat is tender.

	5. Put it on a hot dish, strain the sauce over it and garnish with cooked aubergines, sweet peppers, peas, small potatoes, etc., sauteed in a little butter.
