Andalusian Flamenco Eggs
What You Need:
  • 2 - 3 slices of cooked ham
  • ˝ pound sliced cooked potatoes
  • Olive oil or butter
  • Some strips of sweet peppers
  • 1 tablespoon finely chopped onion
  • A little good stock
  • ˝ pound tomatoes
  • ˝ pound Continental-type sausage
  • ˝ pound cooked peas
  • A few asparagus tips
  • 4 - 8 eggs

  • How To Cook:
    1. Cut the ham into small pieces and fry in the oil or butter, with the onion, until it begins to color.

    2. Add the other vegetables and sufficient stock to moisten, then saute gently for a few minutes, stirring carefully.

    3. Add the sliced sausage and put the mixture into an ovenproof dish; break the eggs on top and put in a hot oven (450°F) for a few minutes, until the eggs are set.

    To Serve: 2 - 4
