What You Need:            (To Make: filling for 1 six-foot Strudel)

  • 1 pound creamed cottage cheese, sieved
  • 5 egg yolks, lightly beaten
  • ¼ teaspoon salt
  • 1 lemon peel, grated
  • ¼ cup Cream-of-Wheat
  • ½ cup seedless white raisins
  • 1 cup sugar
  • 5 egg whites

  • How To Cook:
    1. In a mixing bowl, stir together the cottage cheese, egg yolks, salt, lemon peel, Cream-of-Wheat, raisins and sugar.

    2. In another bowl, beat the egg whites with a wire whisk or a rotary or electric beater until they form soft peaks.

    3. Stir about ¼ of the whites into the cheese mixture, then fold in the rest with a rubber spatula.

    4. Proceed as with other Strudel fillings.
