What You Need:            (To Serve: 4)

  • 2 large, ripe, chilled avocados, peeled, halved, seeded and diced (see salsa guasacaca)
  • ¼ cup fresh lime juice
  • 6 tablespoons confectioners' sugar
  • ½ lime, cut into 4 thin wedges

  • How To Cook:
    1. With the back of a spoon, force the diced avocado through a sieve set over a bowl.

    2. Stir in the lime juice and sugar.

    3. Serve from chilled parfait glasses or dessert dishes, and garnish each serving with a lime wedge.
