											| How To Cook: |

											|  |  | 1. Combine the eggs and sugar and beat lightly. 
 
 |  | 2. Stir in the scalded milk and pour the mixture into the top half of a double boiler set over hot water. 
 
 |  | 3. Cook, stirring constantly, until the custard thickens and coats the spoon. 
 
 |  | 4. Cool, stir in the vanilla and nutmeg, and combine with the mashed bananas in an electric blender or food processor. 
 
 |  | 5. Puree; pour into a shallow pan, cover, and freeze for about 2 hours in the freezer compartment of your refrigerator. 
 
 |  | 6. Remove from the freezer, beat well, and return to the freezer until set or freeze in an ice cream maker according to the manufacturer's directions.
