| 1. Boil spare ribs with salt for approximately 1½ - 2 hours or until tender.

| 2. Cool and cut in single ribs (or remain in rack). 
 
 | 
| 3. Combine sugar, scallions, soy sauce, ketchup and garlic for marinade. Allow ribs to marinate for 2-3 hours. 
 
 | 
| 4. Remove ribs and place in a baking pan. Add water and cornstarch to marinade and boil until thickened. 
 
 | 
| 5. Brush ribs with marinade and place in oven at 350°F / 180°C. Brush continuously until ribs are golden brown. 
 
 | 
| 6. Pour balance of marinade over ribs and bake for another five minutes.
