(Pligouri Salata)
 
What You Need:            (To Serve: 6 to 8)

  • 1 cup pligouri (fine cracked wheat) or bulgur
  • 4 scallions, chopped
  • 1 cup chopped curly parsley
  • 1 pint cherry tomatoes
  • ½ cup olive oil
  • ¼ cup wine vinegar
  • 1 teaspoon minced garlic
  • Salt and pepper to taste

  • How To Cook:
    1. Soak cracked wheat in cold water to cover for 1 hour.

    2. Meanwhile combine chopped scallions and parsley; cut cherry tomatoes in half and add to scallion-parsley mixture.

    3. Drain wheat and mix with greens and tomatoes. Combine oil, vinegar, garlic, salt, and pepper, and pour over salad.

    4. Toss, then let stand for a few minutes before serving.
