What You Need:            (To Make: 1 cup)

  • 6 large sweet peppers
  • ½ cup coarsely chopped onion
  • Salt and pepper to taste
  • 3 tablespoons white vinegar
  • ¼ cup olive oil
  • Chopped fresh parsley to taste

  • How To Cook:
    1. Preheat oven to 450°.

    2. Roast peppers for about 20 minutes, or until wilted and soft. Place in a brown bag and cool for 20 minutes. Remove seeds and outer skin.

    3. Cut inn pieces and put in a bowl. Add onion, salt, and pepper. Combine vinegar and olive oil and add to peppers.

    4. Sprinkle with parsley. Adjust seasonings if necessary.
